Healthier Peanut Butter Cups With Banana
If you love the classic combination of chocolate and peanut butter but want a healthier twist, these Peanut Butter Banana Cups are the perfect treat! Made with simple, wholesome ingredients, they offer a naturally sweet flavor with no refined sugars. These chocolate cups are great for meal prep, a quick dessert, or even an Easter basket treat.
- 1 1/2 cups chocolate chips milk or dark chocolate
- 1/2 cup natural peanut butter smooth or crunchy
- 1 ripe banana sliced into 1/4-inch rounds
- 2 teaspoons coconut oil for smoother melted chocolate
Melt the Chocolate: and coconut oil in a double boiler. You can also put it in a microwave-safe bowl, melt the chocolate with coconut oil in 20-second intervals in the microwave, stirring between each until smooth. I do recommend the double boiler method for smoothest results.
Create the Base: Spoon a small amount of melted chocolate into the bottom of each cupcake liner, spreading it slightly to cover the base.
Add the Filling: Place a banana slice on top of the chocolate layer, then spoon a little peanut butter over the banana.
Top with More Chocolate: Cover the peanut butter and banana with another layer of melted chocolate, smoothing the tops and sprinkle on sea salt.
Chill Until Set: Place the cups in the freezer for about 15 minutes or until the chocolate is firm.
